Rice Jardin - cooking recipe

Ingredients
    3/4 c. onions, chopped
    1 1/2 lb. zucchini, thinly sliced
    2 Tbsp. butter or margarine
    1 lb. can whole kernel corn
    1 lb. can tomatoes
    3 c. cooked rice
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. ground coriander
Preparation
    Saute onions and zucchini in butter or margarine until tender. Add remaining ingredients.
    Cover and simmer 15 minutes. Suitable for freezing.
