White Chili (Chicken Chili) - cooking recipe

Ingredients
    1 lb. Great Northern beans or 2 cans white beans
    6 c. water (omit for canned beans)
    6 c. chicken stock or broth
    1 large onion, chopped
    2 cloves garlic, minced
    2 (4 oz.) cans green chili peppers (use whole, mild and chop yourself)
    1 Tbsp. dried oregano leaves (not the powder)
    1/2 c. Monterey Jack cheese, shredded
    1 Tbsp. ground cumin
    1/2 tsp. ground red pepper
    4 c. cooked chicken, chopped
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Rinse beans and place in Dutch oven; add water.
    Bring to a boil and then reduce heat.
    Simmer for several minutes.
    Remove from heat and let beans soak for 1 hour (or overnight).
    Drain off water.
