Ingredients

5 large potatoes
4 eggs whites
1 Tbsp. Cajun spice
1/4 c. evaporated skim milk
3 Tbsp. flour
Preparation

Slice potatoes in thin chips or julienne in traditional style. Mix egg whites, milk, flour and spices in bowl.
Dip potatoes in mixture and place on cookie sheet coated with vegetable cooking spray (Pam).
Spray top of potatoes lightly also.
Bake at 400\u00b0 until brown.
