Perfect Roast Beef - cooking recipe

Ingredients
    roast beef (cut of your choice)
Preparation
    Heat oven to 325\u00b0.
    Salt and pepper roast, which should be at room temperature, so take out of refrigerator early.
    Place roast on rack in a shallow baking dish and put in oven.
    Roast for 1 hour, then turn oven off.
    Do not open door; it ruins the whole process.
    Allow 3 hours in oven to complete cooking.
    It can go a little longer, if needed.
    About 20 minutes before you want dinner on the table, turn the oven back on to 300\u00b0 to warm up roast.
