Potato Skins - cooking recipe

Ingredients
    2 Tbsp. bacon fat
    1 onion, sliced thin
    1 green pepper, sliced thin
    12 large fresh mushrooms, cleaned and sliced thin
    5 baked potatoes, halved lengthwise
    5 sliced crisp cooked bacon, chopped
    1 c. grated cheese (Mozzarella or Cheddar or both)
    salt and pepper
Preparation
    Heat bacon fat in saucepan.
    Add onion, green pepper and mushrooms; season well.
    Cook 5 to 6 minutes over medium heat. Mix well and continue cooking another 8 minutes over low heat.
