Zucchini Cake - cooking recipe

3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini (rind, seeds and pulp)
2 c. flour
1/2 tsp. baking powder
2 tsp. soda
1 tsp. salt
3 tsp. vanilla
3 tsp. cinnamon
1 c. nuts
Preparation

Beat eggs. Add oil, sugar, zucchini, then add flour, baking powder, soda, salt, vanilla, cinnamon and nuts. Grease and flour pans. Bake in 9 x 13 pan for 35 minutes at 350\u00b0.
You may bake in 2 loaf pans about 1 hour at 350\u00b0 or five 4-inch by 8-inch loaf pans for 40 minutes or Bundt pan for 40 minutes.
