Mandarin Orange Meringue Gelatin - cooking recipe

Ingredients
    1 stick uncolored agar-agar (about 10 grams)
    2 c. water
    2 egg whites (room temperature)
    1 (11 oz.) can mandarins, drained
    1 1/2 c. sugar
    grated rind and juice of 1/2 lemon
    1 c. sliced strawberries
Preparation
    Tear agar-agar into tiny pieces.
    Wash, drain, then soak in 2 cups water for 1 hour.
    Cook in a saucepan over medium heat for 8 to 10 minutes.
    Begin stirring after liquid comes to a simmer.
    Add sugar, continue cooking to reduce mixture by half.
    Cool.
