Carrot Salad - cooking recipe
Ingredients

1 small cucumber, unpeeled and sliced thin
1 c. diced celery
1 medium onion, sliced thin
1/2 chopped green pepper
3 c. cooked carrots
1 can tomato soup
1/2 c. vinegar
1/2 c. oil
1 tsp. salt
2 pkg. Sweet 'N Low (or Tbsp. sugar)
Preparation

This is a \"make ahead\" dish.
Mix all ingredients except cucumbers and refrigerate at least 24 hours.
While mix is setting, soak cucumbers in salt water.
Drain cucumbers and add to carrot mixture just before serving.
