Ingredients

1 egg, at room temperature and separated
1 1/4 c. all-purpose flour
1 tsp. baking powder
1/8 tsp. salt
3 Tbsp. sugar
1/4 tsp. cinnamon
2 Tbsp. unsweetened cocoa
3/4 c. milk
4 Tbsp. butter, melted and cooled
1/4 c. chopped walnuts (optional)
Preparation

Beat egg white in a small bowl until stiff and set aside.
Mix together dry ingredients and set aside.
Combine egg yolk, milk and butter.
Add to dry ingredients, mixing until just blended. Add nuts and fold in with beaten egg white until just mixed.
Do not overbeat batter.
