Eggplant Casserole - cooking recipe
Ingredients

1 eggplant
1 onion
2 sticks celery
1 bell pepper
1 tsp. oleo
1 1/2 c. corn bread
1 egg
3/4 c. Cheddar cheese (grated)
1 tsp. salt
1 can cream of chicken soup
Preparation
-
Peel
and
cube
eggplant.
Cook covered in water until tender.
Saute diced onions, peppers and celery in oleo.
Mash eggplant
in pan with water.
Add crumbled corn bread and egg. Add remaining ingredients (excluding cheese and soup).
Place in greased
casserole\tdish.
Top with cheese.
Place in oven for 20 to 25 minutes.
Heat soup, use as sauce over casserole.
