Scotch Shortbread - cooking recipe

2 1/2 c. all-purpose flour
1/2 c. sugar
2 sticks butter (8 oz.)
1 medium egg yolk
Preparation

Mix together 2 1/4 cups flour with sugar; cut in butter as for pastry.
Bind together with egg yolk.
Knead lightly using other 1/4 cup flour as needed.
Divide into 4 portions.
Roll each one out to a 1/2-inch circle.
Score edges and prick center with fork. Mark into wedges with knife going down 1/8-inch.
Bake at 350\u00b0 for approximately 30 minutes; let cool 5 minutes before removing from cookie sheet.
