Quick Peanut Brittle - cooking recipe

Ingredients
    2 c. shelled parched or raw peanuts
    2 c. white sugar
    1 tsp. baking soda
Preparation
    Melt sugar in iron skillet over medium heat, stirring often. Sprinkle soda over peanuts.
    When sugar has completely melted, quickly pour peanuts and soda into sugar; stir and pour immediately onto greased cookie sheet.
    (The soda will cause the sugar to foam and make the candy airy and light).
    Let cool. Break up candy by dropping pan onto countertop after it is completely cool.
