Crepes Ensenada - cooking recipe

Ingredients
    1 pkg. Flour tortillas
    Monterray Jack cheese, sliced lengthwise
    Chilis
    Ham, sliced
    1/2 c. Butter
    1/2 c. Flour
    1 qt. Milk
    3/4 c. Cheddar, grated
    1 tsp. Prepared mustard
    Salt & pepper to taste
    Paprika
Preparation
    In a 2 qt. pan, gently melt the butter, stir in the flour and cook for a minute or two until the butter and flour start to come together in a ball around the pan. Do not brown. A little at a time add the milk, allowing the sauce to thicken between additions, keep stirring. When all of the milk has been added, stir in the cheddar, mustard, salt, pepper and paprika. Set aside. Put one slice of Monterray Jack cheese, one slice of ham and one chili in the middle of a tortilla. Roll up and secure with a toothpick. Place in a greased pan, side by side, seam side down. Pour over the prepared cheese sauce and bake at 350\u00b0f. 180\u00b0c. gas mark 4 for 45 minutes.
