Ingredients

2 c. finely grated carrots
2 c. sugar
1 Tbsp. grated Mozzarella cheese
1 Tbsp. butter, softened
3 eggs, separated
Preparation

Preheat oven to 375\u00b0.
Combine carrots, sugar, butter, cheese and egg yolks.
Beat egg whites until soft peaks form; fold gently into carrot mixture.
Pour into greased ovenproof dish and bake for about 1 hour.
Serves 6.
