Chitterlings - cooking recipe

Ingredients
    10 lb. chitterlings, thawed
    1/4 c. vinegar
    2 bay leaves
    2 large onions, chopped
    2 stalks celery (with tops), chopped
    7 red pepper pods, sliced or crushed or red pepper to taste
    2 large potatoes, quartered
    4 cloves garlic (more, if you wish)
    salt and pepper to taste
    any other seasonings you wish
Preparation
    Wash chitterlings thoroughly.
    Remove excess fat and grit. Place in a large pot with vinegar and seasonings. Cover with water.
    Bring to a boil.
    Place lid on pot and simmer 3 or 4 hours until tender.
    Serve with spaghetti, cornbread and slaw.
