Vegetarian Lentil Soup - cooking recipe

Ingredients
    1 c. lentils, rinsed
    2 1/2 qt. water
    1 c. barley
    1/4 c. oil
    1 large onion, chopped
    1 large carrot, diced
    1 large potato, diced
    3 Tbsp. minced parsley
    1 (28 oz.) can tomatoes, cut up
    1 1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Place all ingredients in a large pot.
    Bring to a boil. Reduce heat, cover and simmer 1 hour or until lentils and barley are tender, stirring occasionally.
    Add more water, if too thick. Makes about 4 quarts.
    Can be frozen.
