Pasta Primavera Casserole - cooking recipe
Ingredients

1 pkg. rigatoni or ziti pasta
2 medium zucchini, cut into strips
2 red peppers, cut into strips
2 c. sliced mushrooms
1 c. chopped scallions
1/2 c. butter or margarine
chopped tomatoes
1/2 c. flour
2 c. milk
2 c. chicken broth
1/2 tsp. nutmeg
1/4 tsp. pepper
2 (10 oz.) pkg. frozen chopped spinach, thawed and drained (2 c.)
Preparation

Cook pasta as directed; drain.
Spoon into greased 14 x 10 x 2-inch baking dish.
Saute zucchini, red peppers, mushrooms and scallions in butter in large skillet for 3 minutes.
Add tomatoes; spoon over pasta.
Place flour in skillet; blend in milk.
Add broth, nutmeg and pepper.
Cook and stir over medium heat until mixture thickens.
Add spinach.
Pour mixture over vegetables. Cover; bake at 350\u00b0 for 40 to 45 minutes.
Garnish with parsley.
