Lemon Meringue Pie - cooking recipe
Ingredients

7 Tbsp cornstarch
1 1/2 C sugar
1/4 tsp salt
1 1/2 C hot water
3 egg yolks, beaten
1/2 C freshly squeezed lemon juice
1 tsp lemon rind (optional)
2 Tbsp butter
1 baked pie shell
Preparation

Mix cornstarch, sugar and salt in saucepan.
Pour in hot water and cook over high heat stirring constantly, until mixture is thick and translucent, about 4-6 minutes.
Remove from heat and add beaten egg yolks.
Return to heat and cook on low heat, stirring constantly for 2 minutes.
Remove from heat and stir in butter until melted.
Add lemon juice and stir until mixed thoroughly.
