Veal With Peppers, Italian Style(Makes 4 Servings) - cooking recipe

Ingredients
    5 Tbsp. olive oil
    4 large green peppers, seeded and cut into thin slices
    1 medium onion, chopped
    1 garlic clove, minced
    6 green olives, chopped
    1 Tbsp. capers
    1 or 2 anchovies, chopped (optional)
    salt and freshly ground pepper to taste
    2 lb. veal, cut into 1 1/2-inch cubes
    flour
    1 c. chicken stock
Preparation
    In skillet, heat 3 tablespoons of the oil.
    Add the peppers, onion and garlic; saute until tender, stirring often.
    Transfer to a bowl.
    Add the olives, capers, anchovies, salt and pepper.
    Keep warm.
