"Any Night" Casserole - cooking recipe

Ingredients
    1 lb. boneless stew meat, cut in 1-inch cubes
    2 Tbsp. butter
    1/2 c. carrots, chopped fine
    1/2 c. celery, chopped fine
    chopped parsley
    1 pkg. dry onion soup mix
    2 1/2 c. water
    1 small box Minute rice
    Parmesan cheese
Preparation
    In skillet, brown beef in butter.
    Add carrots and celery; cook slowly until nearly tender.
    Stir in soup mix and water.
    Transfer to 2-quart casserole.
    Bake at 350\u00b0 for 1 1/4 hours or until meat is tender.
    Stir in rice.
    Cover and bake an additional 15 minutes. Serve with Parmesan cheese and parsley.
    Serves 4.
