Peach Almond Jam - cooking recipe

Ingredients
    4 c. peaches, chopped
    1/4 c. lemon juice
    1/2 c. chopped almonds
    7 c. sugar
    1 pouch liquid pectin
    1/4 tsp. almond extract
Preparation
    In 6 to 8-quart pot, combine first 4 ingredients and heat to rolling boil for 1 minute.
    Stir constantly and add last 2 ingredients.
    Skim the foam off top with metal spoon and ladle into hot jars allowing 1/4-inch head room.
    Cover and process 5 minutes in boiling water bath.
    Yields 8 jars at 8-ounce size.
