Quick Spicy Shrimp Cocktail - cooking recipe

Ingredients
    12 oz. beer
    1 Tbsp. Old Bay seasoning mix
    1 lb. large shrimp, shelled and deveined
    8 oz. soft tofu
    1/4 c. plus 2 Tbsp. salsa (mild, medium or hot)
    1 tsp. sesame oil (optional)
    Boston lettuce leaves
Preparation
    In a large saucepan, bring beer and seasoning to a boil.
    Add shrimp. Reduce heat to low.
    Cover and simmer 3 to 4 minutes, stirring occasionally, until shrimp are opaque.
    Remove shrimp with slotted spoon to a 9 x 9-inch metal pan.
    Add 1 cup beer mixture. Cover with plastic wrap and place in freezer 5 minutes to cool.
