Wild Rice And Chicken Salad - cooking recipe

Ingredients
    2 pkg. Uncle Ben's wild rice mix
    6 to 8 whole chicken breasts, poached and cubed
    1 c. mayonnaise
    16 oz. can artichoke hearts, chopped
    4 oz. jar pimentos, sliced
    2 c. celery, chopped
    1 c. combined yellow, red and green peppers, chopped
    1 pkg. Good Seasons Italian dressing, prepared with oil and vinegar only (no water)
Preparation
    Prepare rice as package directs, using 1/2 cup less water. Combine cooled rice and chicken with mayonnaise.
    In another bowl, combine artichokes, pimento, celery and peppers with salad dressing.
    Mix all ingredients together.
    Can be made a day ahead and assembled before serving.
    Serves 12 to 15.
