Lobster Newburg - cooking recipe

Ingredients
    1/4 c. butter or margarine
    2 Tbsp. flour
    1 1/2 c. light cream
    3 egg yolks, beaten
    2 (5 oz.) cans lobster, drained, broken into large pieces and cartilage removed
    3 Tbsp. dry white wine
    2 tsp. lemon juice
    1/4 tsp. salt
    4 baked patty shells
    paprika
Preparation
    Melt butter in a pan; blend in flour and add cream all at once. Cook and stir until thickened and bubbly.
    Stir about half the hot mixture into egg yolks; return to hot mixture.
    Cook and stir until thickened, but do not boil.
    Add lobster; heat through.
    Stir in wine, lemon juice and salt.
    Sprinkle with paprika; spoon into patty shells.
    Serves 4.
