Chicken Cacciatore - cooking recipe

Ingredients
    1 frying chicken, cut up
    1/4 c. olive oil or shortening
    2 small onions, chopped
    1 or 2 cloves minced garlic
    pinch of oregano
    2 c. canned tomato sauce
    1/4 c. white wine or sherry or 2 Tbsp. vinegar wine
    1 Tbsp. minced parsley
    1 c. mushrooms
    salt and pepper to taste
Preparation
    Brown chicken on all sides in oil, about 10 to 15 minutes. Add onion and garlic; add oregano and tomato sauce.
    Cover pan tightly and simmer about 30 minutes, then add wine or vinegar wine; add parsley, mushrooms and rest of seasonings.
    Cook 15 minutes more with cover on.
