Diabetic Fruit Cake - cooking recipe

Ingredients
    1 c. seedless raisins, chopped
    1 c. pecans, chopped
    1 c. fresh cranberries/CH
    1 c. unsweetened pineapple/CH
    1 Tbsp. grated orange rind
    1 Tbsp. grated lemon rind
    3 Tbsp. liquid artificial sweetener
    1/2 c. unsweetened orange juice
    3 Tbsp. melted margarine
    1 1/2 c. sifted flour
    1/2 tsp. salt
    1 tsp. baking soda
    1/4 tsp. allspice
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
Preparation
    Pour orange juice and sweetener over chopped cranberries and let stand for 1 hour.
    Combine raisins, pecans, pineapple, cranberries, orange juice, orange and lemon rind.
    Add melted margarine.
    Sift and measure flour.
    Add salt, soda, allspice, cinnamon and nutmeg and sift again.
    Add dry ingredients to fruit mixture and stir until thoroughly mixed.
    Put 2 1/2 tablespoons of batter in each muffin cup.
    Bake at 325\u00b0 for 30 minutes, until lightly browned.
    One muffin equals 1 serving.
    Freezes well. Exchanges: 1 bread/1 fruit.
    Makes 15 to 18 cupcakes.
