Mary'S Mock Sweet Potato Pie - cooking recipe

Ingredients
    6 medium carrots
    5 medium white potatoes
    3 Tbsp. margarine
    3 eggs, slightly beaten
    1/2 c. evaporated milk
    pinch of salt
    1 tsp. vanilla
    1 1/3 sugar
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    2 (9-inch) pie shells
Preparation
    Preheat oven to 350\u00b0.
    Cook carrots; drain well.
    Blend in blender or food processor until fully blended.
    Pour in bowl.
    Do the same with the potatoes.
    Add the next 8 ingredients to the carrots and potatoes and stir together well.
    Pour in 9-inch pie shells.
    Cook at 350\u00b0 for 30 minutes.
    Reduce heat to 300\u00b0 and continue to cook for 15 more minutes.
    Makes 2 (9-inch) pies.
