Eggplant Casserole - cooking recipe

Ingredients
    1/2 loaf bread, cubed
    Romano cheese, grated
    parsley, salt, pepper and garlic
    eggplant
    Mozzarella or Swiss cheese
    tomato sauce
Preparation
    Soak sliced eggplant in water (removes bitterness); saute in oil.
    Mix bread, Romano cheese, parsley, salt, pepper and garlic in bowl.
    In casserole, add layer of eggplant slices, mixed bread cubes, Mozzarella cheese and tomato sauce.
    Repeat layers.
    Bake at 350\u00b0 for approximately 30 to 45 minutes.
