Carrot Orange Soup - cooking recipe

Ingredients
    2 c. sliced carrots
    1 Tbsp. butter
    1 bay leaf
    1/8 tsp. ground ginger
    mint sprigs
    1/4 c. onion, minced
    1 c. vegetable stock
    1/2 c. mandarin juice
    salt and white pepper
    1 tsp. chopped mandarin peel
Preparation
    Saute carrots and onion in butter for 5 minutes.
    Add stock and bay leaf, cook 20 minutes or until carrots are soft.
    Puree mixture, return to pan, add mandarin juice, ginger and salt and pepper to taste.
    Reheat, garnish with mint and mandarin peel. Serves 2.
