Chicken Fiesta - cooking recipe

Ingredients
    1 pkg. au gratin potato mix
    2 1/2 c. boiling water
    2/3 c. milk
    2 Tbsp. canned, diced green chilies or jalapenos
    4 chicken breast halves (excess fat removed)
    1/2 c. shredded Cheddar cheese
    1/2 c. Monterey Jack cheese
Preparation
    Heat oven to 400\u00b0.
    Place potato slices and sauce mix in ungreased baking dish.
    Stir in water, milk and chilies.
    Place chicken breast on top.
    Bake, uncovered, for 45 to 50 minutes. Sprinkle cheese on top and bake 5 more minutes until melted.
    Can top with chopped tomato if you like.
    Chicken breast fillets will also work.
    Can double for company.
