Holiday Yams - cooking recipe
Ingredients

4 to 5 yams
2 eggs, beaten
orange rind, grated from 1 orange
1/2 tsp. salt
1/2 c. sugar
4 oz. chopped walnuts
orange juice (enough so it's not too dry)
Preparation

Bake yams; when done, peel and mash.
Add ingredients.
Bake in 425\u00b0 oven for 15 to 20 minutes.
Makes a good vegetable casserole and it serves a crowd.
