Zucchini Parmesan - cooking recipe
Ingredients

2 lb. zucchini
1 egg, well beaten
1 envelope Shake 'n Bake coating for chicken (original)
1/4 lb. Mozzarella cheese, shredded
1 can tomato sauce
1/4 c. grated Parmesan cheese
1/4 tsp. oregano
Preparation

Cut zucchini lengthwise, then crosswise into quarters.
Dip pieces into egg, next into Shake 'n Bake mix.
Arrange in greased 9 x 13-inch pan, single layer of zucchini.
Bake at 400\u00b0 for 20 minutes or until tender.
Top with Mozzarella cheese, then tomato sauce.
Sprinkle with Parmesan and oregano mixture.
Bake 10 minutes longer.
Serves 6.
