Ingredients
    about 1 1/2 lb. potatoes
    1 egg or egg substitute
    3 Tbsp. water
    1 c. cornflake crumbs
    8 skinless chicken thighs or breasts
    1 tsp. salt
    1 tsp. pepper
    1 tsp. dried tarragon or sage
    Honey Barbecue Dipping Sauce
Preparation
    Scrub potatoes; piece with fork.
    Place in microwave-safe baking dish.
    Microwave on High 8 minutes.
