Low-Fat Snow Peas Oriental - cooking recipe

Ingredients
    vegetable cooking spray
    1 tsp. light sesame oil
    1/2 lb. fresh snow pea pods
    1/2 c. carrots, sliced
    1/4 c. water chestnuts, chopped
    1/2 c. chicken broth
    1 tsp. low sodium soy sauce
    1 tsp. cornstarch
Preparation
    Coat a nonstick skillet with cooking spray.
    Add oil; place over medium heat until hot.
    Add snow peas and carrots.
    Simmer 2 minutes.
    Add chestnuts and broth.
    Bring to a boil.
    Cover, reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
    Combine soy sauce and cornstarch, stirring until cornstarch is dissolved.
    Add to vegetable mix.
    Cook over medium heat, stirring constantly, until sauce thickens.
    Serve immediately.
    About 51 calories per 1/2-cup serving.
