Cheesy Potato Soup - cooking recipe
Ingredients

3 medium potatoes, peeled and quartered
1 small onion, finely chopped
1 c. water
1 tsp. salt
3 c. milk
3 Tbsp. margarine, melted
2 Tbsp. flour
1 Tbsp. parsley flakes
1/2 c. diced celery
1/2 c. diced carrots
1 c. shredded Cheddar or Swiss cheese
pepper to taste
Preparation

Cook potatoes, onion, celery and carrots in 1 cup water and salt until tender.
Don't drain.
Mash slightly.
Stir in milk. In small bowl, mix melted margarine, flour, parsley and pepper. Stir into potato mixture.
Cook and stir until bubbly.
Remove from heat and stir in cheese.
Stir until cheese is almost melted. Makes 5 to 6 servings.
