Pumpkin Logs - cooking recipe
Ingredients

12 eggs
4 c. sugar
2 2/3 c. pumpkin
3 c. flour
8 tsp. cinnamon
4 tsp. ginger
4 tsp. baking powder
3 (8 oz.) cream cheese
16 tsp. butter
2 tsp. nutmeg
2 tsp. salt
3 c. 10x sugar
4 c. walnuts (optional)
4 tsp. vanilla
Preparation

Spray generously 4 cookie sheets (with sides) with Pam.
Pour equally on the sheets and bake.
Let cool 5 minutes, then turn them out on a tea towel that is generously sprinkled with 10x sugar.
Roll and allow to cool completely in tea towel.
Unroll and spread filling; reroll.
Will cut neater if frozen first.
