Carrot Casserole - cooking recipe
Ingredients

2 lb. carrots, peeled, sliced and cooked
1/4 lb. butter
1 large onion, sliced
1/2 lb. Velveeta cheese (can use less)
1/2 c. crushed Ritz crackers
1 head Chinese cabbage, cut up
2 to 3 cloves garlic, diced
1 bunch scallions, cut in large pieces
lots of salt (over all)
Preparation

Preheat oven to 400\u00b0.
Slice each potato lengthwise into 1/4-inch oval and then slice each oval lengthwise into matchstick.
Coat a baking sheet with 3 sprays of vegetable oil.
