Stuffed Potatoes Cacciatore - cooking recipe

Ingredients
    4 medium baking potatoes
    1 medium zucchini, diced
    1/4 c. chopped onion
    2 cloves garlic, minced
    2 Tbsp. water
    2 c. cooked, chopped chicken
    1 (8 oz.) can tomato sauce
    1 (8 oz.) can stewed tomatoes
    3/4 tsp. dried Italian seasonings
    1/2 c. shredded Mozzarella cheese
Preparation
    Scrub potatoes.
    Prick with fork.
    Cook uncovered in microwave on 100% power, 13 to 16 minutes.
    Let potatoes sit while making sauce.
    Combine zucchini, onion, garlic and water in covered container.
    Cook on High, 3 to 5 minutes or until tender.
    Drain. Stir in chicken and both cans of tomatoes and Italian seasonings. Cook covered 5 to 7 minutes until heated through.
    Split potatoes. Mash centers.
    Add salt and pepper to taste.
    Spoon sauce on top, then sprinkle with cheese.
    Return to microwave to melt cheese.
