Hollandaise Sauce - cooking recipe

Ingredients
    1/4 lb. butter
    3 egg yolks
    3 Tbsp. lemon juice
Preparation
    Cut butter in 4 or 5 pieces.
    Put in top of double boiler with egg yolks and lemon juice.
    Let stand at room temperature for 1/2 hour or more.
    Just before serving, heat over gently boiling water 1 1/2 minutes, stirring briskly with wooden spoon.
    Serve at once over broccoli or asparagus.
