President John F. Kennedy Fish Chowder - cooking recipe

Ingredients
    2 lb. haddock
    2 oz. diced salt pork
    2 onions, diced
    1 c. chopped celery
    1 bay leaf, crumbled
    1 tsp. salt and pepper
    1 qt. milk
    2 Tbsp. butter
    4 large potatoes, diced
Preparation
    Simmer haddock in 2 cups water for 15 minutes.
    Drain; reserve broth.
    Remove bones from fish.
    Saute diced pork until crisp.
    Remove and set aside.
    Saute onions in pork fat until golden brown.
    Add fish, potatoes, celery, bay leaf, salt and pepper.
    Pour in fish broth plus enough water to make 3 cups liquid.
    Simmer 30 minutes.
    Add butter and milk.
    Simmer 5 minutes.
    Serve sprinkled with diced pork.
    Serves 6.
