Cheese Pie - cooking recipe

Ingredients
    2 c. cottage cheese
    2 eggs
    1 tsp. vanilla extract
    1 1/2 Tbsp. sugar substitute
    1 Tbsp. lemon juice
    8 oz. evaporated skim milk
Preparation
    Beat cheese in blender until smooth; add sweetener, lemon juice, vanilla and eggs.
    Beat well.
    Add milk and beat again. Pour into 8-inch pie pan.
    Bake at 350\u00b0 for 35 minutes.
    This is a good light lunch.
