Tortiere (Pork Pie) - cooking recipe

Ingredients
    2 large potatoes, peeled
    1 lb. ground pork
    1/2 cup finely chopped onion
    1/2 cup beef broth
    1 clove garlic, minced
    1 bay leaf
    1/4 tsp ground ginger
    1 recipe pastry
Preparation
    Cut up potatoes, cook in boiling water 20 minutes.
    Drain and mash.
    Brown pork and drain off fat.
    Stir in next 6 ingredients, 1/2 tsp. salt and 1/4 tsp. pepper.
    Cover and simmer 20 minutes, stirring often.
    Discard bay leaf, stir in potatoes and let cool. Roll half the pastry into a 12 inch circle.
    Line a 9 inch pie pan. Trim even with rim, fill with meat mixture.
    Roll remaining dough, slit.
    Place on top of filling and trim to 1/2 inch beyond rim. Seal, flute and bake at 400\u00b0 for 30 minutes.
