Veal Meat Loaf - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1/2 medium onion, diced
    1 stalk celery, diced
    1 carrot, peeled and shredded
    1 lb. ground veal
    3 Tbsp. parsley
    1/2 c. bread crumbs
    1/2 tsp. nutmeg
    2 eggs
    1 tsp. salt
    black pepper to taste
Preparation
    Preheat oven to 400\u00b0.
    Heat oil in frying pan and add the onion.
    Saute for 3 minutes and add the celery and carrot.
    Saute for five minutes over medium-high heat.
    Mix the vegetables into the ground veal.
    Add the parsley, bread crumbs, nutmeg, eggs, salt and pepper.
    Mix well.
    Lightly oil a baking dish.
    Divide mixture into small individual loaves.
    Place in baking dish and bake for 15 to 20 minutes.
