Mexican Rice - cooking recipe
Ingredients

1/4 c. shortening
1 1/2 c. rice, rinsed
1/4 c. tomato sauce
diced onion
salt to taste
3 c. chicken broth
Preparation

Melt shortening in skillet; add onion and rice until rice turns a pink color (about 5 minutes).
Add chicken broth and tomato sauce.
Bring to a boil; reduce heat and simmer 25 minutes with a lid on skillet.
