Roast Leg Of Lamb With Garlic - cooking recipe

Ingredients
    2 large heads garlic (3 oz. size), cloves separated and peeled
    6 to 7 lb. leg of lamb, hipbone removed, fat trimmed to a thin layer
    1 Tbsp. olive oil
    1 tsp. ground cumin
    4 sprigs each fresh thyme and rosemary
    1 tsp. salt
    1/2 tsp. pepper
    1/2 lb. shallots, peeled and halved
    1 large carrot, peeled and sliced
    1 c. chicken broth, plus more broth or water, if necessary
    1 c. red wine
    2 Tbsp. tomato paste
Preparation
    Day Before Serving:
    Sliver 3 garlic cloves. With a knife tip, make small slits in lamb. Insert a garlic sliver into each. Rub lamb with olive oil and cumin. Remove leaves from 1 thyme sprig. Chop.
    Sprinkle over lamb.
    Lay remaining herb sprigs on lamb. Wrap tightly in plastic wrap. Place on platter and refrigerate overnight.
