One Dish Fish - cooking recipe

Ingredients
    1 small onion
    1 Tbsp. butter
    1 lb. fish fillets
    1/4 c. lemon juice
    1/2 tsp. oregano
    2 c. sliced zucchini or broccoli
    1 c. sliced mushrooms
    1/2 c. tomato, diced
    1/2 c. shredded cheese
Preparation
    Cook onion until clear.
    Add fish, lemon juice, oregano, zucchini and mushrooms.
    Cover and simmer 10 minutes.
    Top with tomato and cheese.
    Cover and simmer 2 minutes (until cheese melts).
    Serve right away.
    Great with a fresh catch in the summer.
