Spicy Chicken Jambalaya - cooking recipe

Ingredients
    6 chicken breasts
    1/4 c. olive oil
    1/3 c. minced onion
    1/2 c. chopped tomato
    1 green pepper, diced
    1/2 c. celery, diced
    1 c. rice
    1 1/2 c. boiling water
    1 bay leaf
    1/4 tsp. thyme
    1/4 c. chopped parsley
    salt, pepper and Tabasco sauce to taste
    1 slice bacon, crumbled
Preparation
    Saute chicken breasts in oil about 5 minutes and remove from pan.
    Saute onion and tomato for 3 minutes.
    Return chicken to pan; stir in rice, green pepper and celery.
    Cook for 1 minute, then add water, bay leaf, thyme and parsley.
    Simmer until chicken is tender and rice is almost done.
    Stir in salt, pepper and Tabasco sauce to taste.
    Place in casserole and heat in 350\u00b0 oven for 5 to 10 minutes until rice is done.
    Remove bay leaf and garnish with bacon; serve.
