Lettuce Wedges And Beet Dressing - cooking recipe

Ingredients
    1 c. diced beets
    1/2 c. mayonnaise or salad dressing
    1 1/2 tsp. prepared horseradish
    1 medium iceberg lettuce
Preparation
    Drain beets thoroughly, reserving liquid.
    Mash beets lightly with a fork.
    Stir in mayonnaise, horseradish and salt.
    Add beet juice, if desired, to make dressing the desired consistency.
    Core lettuce and cut in 6 wedges.
    Spoon on dressing.
    (Makes an attractive salad.)
