Christmas Cake(British Style) - cooking recipe
Ingredients

1/2 lb. butter or margarine
1 Tbsp. mixed spice
1/4 tsp. nutmeg
1/2 lb. flour
1 lb. seeded raisins
1/2 lb. dried apricots
1/2 lb. almonds
grated rind of 1 orange or lemon
1/2 lb. brown sugar
1 tsp. cinnamon
6 eggs, separated
pinch of salt
1/2 lb. currants (optional)
1/4 lb. mixed peel (lemon and orange)
1/4 pkg. glazed cherries
Preparation

Preheat oven to 250\u00b0 to 275\u00b0.
Cream the butter, sugar and spices.
Beat in egg yolks.
Fold in half of stiffly beaten egg whites, then half of sifted flour and salt, then remainder of egg whites and remainder of the flour.
Add prepared chopped fruit. Bake for 3 1/2 to 4 hours in papered 8-inch square pan.
