Shrimp And Spinach Quiche - cooking recipe

Ingredients
    1 frozen (9-inch) deep dish pie crust
    1/4 lb. sharp Cheddar, grated
    8 jumbo eggs
    6 oz. cleaned shrimp, cooked
    1/4 c. chopped scallions
    2 Tbsp. melted butter
    1/2 lb. Swiss cheese, grated
    1/4 lb. Colby cheese, grated
    1/2 c. milk
    5 oz. cleaned and drained spinach
    1/2 tsp. salt, pepper and nutmeg
Preparation
    Prick bottom and sides of pie crust and bake for 5 minutes at 375\u00b0.
    Line bottom of crust with thin layer of Swiss cheese, then sprinkle on Colby and Cheddar cheeses and top with remaining Swiss cheese.
    Beat eggs with milk.
    Add salt, pepper, nutmeg and spinach.
    Pour mixture on top of cheeses.
    Sprinkle scallions on top; dot with melted butter.
    Place pie on nonstick cookie sheet and bake at 375\u00b0 for an hour or until mixture is set.
    Serves 4 to 6.
